In the industrial cocolate manufacture process, the chocolate conching process is necessary. Following will introduce the the chocolate conching machine and the role of conching.  

Conching process in chocolate manufacture:
The conche machine is mainly used for fine grinding chocolate raw materials (cocoa powder, cocoa butter, sugar powder, milk powder, etc.). In the process of conching, it is through the impact and friction between the material and the steel ball in the vertical cylinder, the material is fine grinded to the required fineness.

Structure of chocolate conche machine:
The conching machine is mainly composed of body, tool carrier, transmission parts and discharge door. The degassing port of the end cover of the machine body is rectangular, the outer layer of the machine body is made of stainless steel material, the blade and the reinforcement plate are combined with the middle single fulcrum to tighten the flexible connection, and the lower part of the reinforcement plate and both sides are welded with two baffles. The inner jacket strip is arranged in the circumferential axial direction and is in the form of an inner regular gear.


The role of conching chocolate:
Conching can make the material to a certain degree of fineness, and most of the material fineness to 15-20 microns, will make the taste delicate lubrication.
Conching makes all kinds of materials mix evenly, forming a highly uniform dispersion system, and has good fluidity.
Conching chocolate paste can reduce the moisture content in the material, so that the water content is not more than 1%.
Conching can make the perfume mix evenly, which is convenient for chocolate flavoring and perfuming, making chocolate have uniform comfortable characteristics.
Conching can make the material dilute and emulsify. If the temperature of the material is kept constant, the finer the fine grinding, the thicker the material, the higher the viscosity, and the lower the fluidity.
